GF Oat Flour Apple Muffins

These are my new favorite muffins.  GF bakers...READ. MY. LIPS....oat flour is the way!  "Wait, don't oats contain gluten?"  No, they don't!  People assume oats are a gluten grain because they are often processed in mills that also process wheat flour.  Therefore, they can become cross-contaminated  with trace elements of wheat flour.  Fortunately, I do not have a gluten allergy or Celiac, so I don't have to stress about possible cross contamination, but some of you do.  No worries; there are plenty of vendors out there selling certified gluten free oat flour processed in gluten free mills.

I LOVE oat flour for its taste, texture, price, and ease of substitution.  It is by far the most like wheat flour.  It's almost a direct substitute in place of wheat flour in most recipes, as well.  Give it a try!

GF Oat Flour Apple Muffins

Ingredients:
130g oat flour (bakers, if you don't have a simple digital scale, GET ONE!)
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp, or to taste, cinnamon (optional)

1 egg
1/4 cup coconut oil
1/3 cup honey
1 cup grated apple (lightly packed to fit measuring cup - appx. 1 medium sized apple)
1/2 tsp apple cider vinegar
1/2 tsp. vanilla extract

Directions:Preheat oven to 375F.

Combine all the dry ingredients in a large bowl.

Melt coconut oil via the microwave or stove top; measure into liquid measuring cup.  Whisk melted oil into beaten egg, vanilla, vinegar.  Measure honey in same liquid measuring cup oil was in (this make for easy removal of the honey), and add to the egg/oil mixture.  Add grated apple to liquid mixture.

Add liquid ingredients to dry ingredients.  Yields eight standard sized muffins.  Bake for ~15min.
